ACCRA BANANA – BANANA FRITTERS – EASY RECIPE

This is Accra Banana in all it’s glory. In culinary language we call this Banana Fritters. In our lingua franca, it is Accra Banana and it is delicious!

The main ingredient in this is banana, of course. It is traditionally made with grated cassava. Cassava is labeled “yuca” in stores here.

This girl likes to cook but sometimes she just likes to keep it short and simple. So instead of using grated cassava, I use garri. Garri is made out of cassava so technically I’m still using cassava right? Eat your Accra Banana with some pepper sauce and you will  be in cloud nine. I promise.

ACCRA BANANA RECIPE

Prep time: 5 mins
Cook time: 10 mins
Total time: 15 mins
Serves 2

Ingredients

2 very ripe bananas
3/4 cup of garri
Salt to taste
1/2 litre vegetable or palm oil for frying
Here is what you need to know:

The bananas you use should be very ripe. Ideally, they should start developing dark spots. This makes it easier to mash and gives your fritters that rich banana flavour.

Peel the bananas, mash a little then put in a blender. Add half a cup of water and blend to a smooth paste.

Pour that into a bowl. It may start turning dark. Don’t worry, that is perfectly normal with bananas.

Now add in your garri and a little salt to taste.

Give that a good stir.

Now let it sit for about five minutes. During this period, the garri will absorb the liquid and the mixture will harden up.

Heat up your oil on medium heat in a pot. Now make balls like this and put into the oil.

Be careful not to overcrowd the pan.

Let the delicious balls fry until they are a nice brown colour.

Put on paper towel or any other thing to drain.

Enjoy with pepper sauce, tea or anyhow you like it.
Notes
If you want to go with the traditional method, grate a cassava and mix with mashed banana. DO NOT blend the bananas with this method. Mash them with a wooden spoon or pound in a mortar until you get a paste.
Another way to make this is to use corn meal, also know as “kendeh”. That’s the coarse part of ground corn. In this case, you’ll add one cup of corn meal and a tablespoon of flour to two blended bananas. The mixture will be lighter so you’ll have to scoop with a spoon and fry.
To make delicious pepper sauce, combine one red habanero pepper, 3 cloves of garlic, half an inch of ginger, half a small onion and blend. Put in a pot and season with salt and half a seasoning cube. Bring to boil. When it starts boiling, put in a tablespoon of vegetable oil and let it simmer for one minute.

  2. Thanks Pre, i’ve always done accra with cassava. I tried your garri version yesterday, truth be said i had no cassava at home and going to the market just for that was wasting my gas. My girls came home from boarding school(ambazonia drama) and i wanted to give them this treat which they like so much. They gave me the look like this time mama has just gone bananas in the kitchen.
    i did’nt bother with their looks, went ahead and made the accra. The accra was delicious with peper sauce and fried morocco fish. Hihihi see round 2 and round 3 on the girls’ plates. Mr Cassava sorry for dropping you but henceforth i pledge my loyalty to Ma Garri.
