When I tell you this recipe is what dreams are made of, I truly mean it. I can always count on everyone being thrilled when I make this delicious chicken sandwich recipe. It is great for serving a crowd!

This dish is so much more than a classic chicken mayo sandwich. It has just the right amount of seasonings, and I love how the soft bread gets a nice crispiness when I toast it on the skillet. The creamy filling with mayo perfectly coats the chicken, ensuring that no part of the sandwich is dry.

And the crunchy celery and tangy red onion take it to the next level. There are obviously many different ways to make chicken sandwiches, from recipes that use breaded chicken to grilled chicken. But a chicken mayonnaise sandwich like this one reigns supreme.

After all, is there anything better than the combination of chicken and mayo? Truly, it is one of my all-time favorite combos! The meaty, savory chicken tastes so amazing with rich and creamy mayonnaise.

Iโ€™m always trying to come up with new ways to incorporate the two together to create similar recipes, like my Mayonnaise Chicken recipe or my Chicken Macaroni Salad recipe. (By the way, you should definitely give those recipes a try, too!)

Chicken Mayonnaise Sandwich Recipe

This absolute classic version of a chicken mayo sandwich is the best recipe because it is versatile and adaptable! Donโ€™t have whole chicken breast meat? No problem. You can use shredded leftover chicken, like rotisserie chicken.

Or, use up some leftover roast chicken and slice it up! Honestly, roast chicken is one of my favorite ways to make it.

Also, you can use all sorts of different breads. So, donโ€™t feel like you have to go to the store to get special bread. As long as it is sturdy enough to hold the creamy chicken filling, it will get the job done.

Aside from its versatility, I know you’re going to appreciate this recipe for how easy it is. Chicken sandwiches donโ€™t have to be hard to make! So, get ready to be blown away by the recipeโ€™s ease, and of course, by how appetizing and delectable it is.

Ingredients Needed

Easy ingredients, extraordinary recipe! Here is what you need:

Ingredients for chicken sandwich with mayo.

Here are some notes about the primary ingredients in this recipe:

  • Chicken: Boneless chicken is the foundation of this sandwich! It provides a nice, meaty texture and makes the sandwich so satisfying. I used boneless skinless chicken breast, but you can also use shredded rotisserie chicken.
  • Bread: Youโ€™ll need bread for the sandwiches, such as white bread, hoagie rolls, croissants, or other types of buns.
  • Assorted Seasonings: Between seasoning the chicken and the dressing, youโ€™ll need an array of spices, including salt, black pepper, onion powder, garlic powder, and crushed pepper flakes.
  • Fresh Veggies: Diced red onion and celery are mixed into the mayo chicken to provide extra flavour and a nice crunchy texture that offsets the creamy mayo. This recipe also requires fresh lettuce to put on the sandwich when serving!
  • Mayonnaise: This provides a creamy, rich base to coat the chicken pieces with. Use your favorite brand or make some Homemade Mayonnaise.

Youโ€™ll also need some other ingredients, like olive oil, lemon juice, Dijon mustard, and butter, so make sure to check out the recipe card for the full recipeโ€™s ingredient list and measurements.

Recipe Variations

The neat thing about this chicken mayonnaise sandwich is that you can add extra ingredients for extra flavor. There are plenty of ways to experiment with this sandwich! Here are a few ideas:

  • Seasonings: When you cook the chicken, add additional spices, such as ground coriander leaves, cumin, celery seed, or dried herbs.
  • Boiled Eggs: You can hard-boil whole eggs, chop them, and mix them with the other ingredients.
  • Cheese: Feel free to add cheese! You can mix shredded cheese right into the mayonnaise chicken mixture.
  • Use Other Meat: This recipe works just as well with turkey breast meat, whether diced or shredded.
  • Make it Spicy: To make the sandwich spicier, add cayenne powder, chipotle adobo sauce, or jalapenos to the mayo mixture.

 Substitutions

  • Mayo: You can substitute a portion of the creamy mayonnaise with Greek yogurt or sour cream. Greek yogurt can also entirely replace the mayoโ€”just keep in mind it will make the sandwich tangier. Another option is to use vegan mayo if you want to use mayo that doesnโ€™t have eggs.
  • Lemon Juice: If you donโ€™t have lemon juice, you can also use fresh lime juice. It will slightly alter the flavor but still give a nice citrusy undertone.
  • Bread: Other types of bread, besides white bread, can be used for the chicken mayonnaise sandwich, like whole grain or sourdough. Just make sure to use something hearty! Super soft bread will get soggy or simply fall apart.
  • Seasonings: White pepper can be used instead of black pepper. You can also use other chili flakes instead of red pepper flakes.

Tips For Perfect Chicken Mayonnaise Sandwiches

    • If you are someone who just can’t get enough mayo, feel free to put an extra dollop of mayo on the toasted bun before loading it with the lettuce and chicken filling.
    • Keep the bread, lettuce, and chicken mixture separate if you have any leftovers. You’ll want to store the meat in an airtight container with a fitting lid. You can keep the lettuce in a resealable baggy! And the bread can stay at room temperature, lightly wrapped.
    • Don’t assemble the sandwiches until you are actually ready to enjoy them; this way, the bread won’t get super soggy by the time you actually eat it.
    • Make ahead: feel free to use this recipe for meal prep! You can make the mayonnaise chicken mixture and keep it in a container to enjoy as part of your lunches throughout the week. In fact, it tastes amazing once it rests overnight since all of the flavors have time to marry.

    • ยผ teaspoon salt
    • ยผ teaspoon black pepper
    • ยผ teaspoon onion powder
    • ยผ teaspoon garlic powder
    • ยผ teaspoon crushed pepper flakes
    • 1 Tablespoon olive oil
    • ยผ cup mayonnaise
    • 1 teaspoon Dijon mustard
    • 1 Tablespoon lemon juice freshly squeezed
    • 2 Tablespoons diced celery
    • 2 Tablespoons diced red onion
    • Pinch of ground black pepper
    • 4 green leaf or romaine lettuce leaves for dressing the sandwiches, they should be rinsed and thoroughly patted dried with paper towels
    • 8 slices white bread or 4 hoagie rolls, or 4 big croissants
    • 2 Tablespoons butter

    Instructions

    • Pat the chicken dry with paper towels. Season with salt, pepper, onion powder, garlic powder, and crushed pepper flakes.
    • Heat the skillet on medium-high heat. Add the chicken and cook for 3-4 minutes on the first side, and 3 minutes on the second side. The internal temperature of the chicken should read 165โ„‰ for it to be considered done.
    • Let the chicken rest for 5 minutes then dice it into really small pieces.
    • Add the mayonnaise, Dijon mustard, lemon juice, diced celery, diced red onion, and a pinch of black pepper to a bowl. Whisk well to combine. Add the chicken and mix until evenly coated with the creamy dressing.
    • Butter both sides of the bread. Place a large skillet on medium-high heat and toast both sides of the bread.
    • To assemble the sandwiches, place a lettuce leave on a toasted slice of bread. Spread a quarter of the chicken mayonnaise filling over the lettuce. Cover with another bread slice. Cut the sandwich in half diagonally using a serrated knife and serve.

    Notes

    • Beat the chicken using a stand mixer on medium speed to shred it more finely and quickly. I prefer diced chicken in my sandwiches because they add meatiness, but you could shred the chicken if you prefer.
    • For a neater presentation cut the crust of the bread off before building the sandwiches.
    • Use day-old bread, which is more sturdy for a sandwich like this. Fresh bread might be too delicate.
    • Don’t assemble the sandwiches until you are actually ready to enjoy them; this way, the bread won’t get super soggy by the time you actually eat it.
