This baked chicken and rice casserole is made in one pan with very few ingredients. An easy cheesy dinner the whole family will love! All you need to do is combine all ingredients in an oven-safe bowl and bake for an easy one-pan chicken and rice dish. Enjoy!

Instructions
Prep the Ingredients: Start by cutting the chicken breasts into 1-inch cubes and set aside. Chop the onion and bell pepper into small pieces (brunoise). Preheat the oven to 350°F (175°C).
Prepare the Baking Dish: Grease a casserole dish (9x13 inches) generously with the unsalted butter. This will prevent sticking and add extra flavor to the dish.
Season the Chicken: In a bowl, season the chicken cubes with garlic powder, black pepper, and a pinch of salt. Mix well to coat the chicken evenly with the spices.
Assemble the Casserole: Spread 2 cups of rice evenly in the bottom of the casserole dish. Layer the seasoned chicken pieces on top of the rice, followed by the chopped onions and bell peppers. Top with the remaining butter (cut into little pieces).
Add Liquid: Pour 3 cups of water or chicken broth into the dish, ensuring the rice is fully submerged in the liquid. Cover the casserole dish tightly with aluminum foil.
Bake: Place the covered casserole in the preheated oven and bake for 40-45 minutes, or until the rice has absorbed the liquid and the chicken is fully cooked.
Cheesy Topping: Remove the casserole from the oven, uncover it, and sprinkle the grated cheddar cheese evenly over the top. Return it to the oven uncovered for an additional 5-10 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Optionally, garnish with fresh parsley before serving.
